Things I learned from the Wikipedia entry on haggis:

1. I was under the impression that recipes for haggis varied, and that only some recipes contain some amount of offal; it turns out, no, although recipes do vary, all of them are primarily offal, and in particular, the "pluck" of the sheep, (i.e. the particularly gory stuff).

2. Consequently, haggis is illegal in the United States. Selling lungs for human consumption is illegal, don't you know.

3. Haggis is considered a delicacy, even by untrained palates; unlike most offal-based dishes, which are, shall we say, an acquired taste, haggis is considered just plain tasty, despite the famously nasty description.

4. Meat-free haggis recipes exist, for god only knows what reason.

5. In keeping with Scotland's fascination with deep-frying things, haggis is often deep-fried.

In short, I found this short to be quite educational. I'd like to thank you and Christina Dunham. Might I suggest to Christina that for her next culinary travelogue she try a scotch egg? (Wikipedia claims that a scotch egg is not actually Scottish.)

Mmmmm, lungs.

I've had scotch egg before; it wasn't bad, though I suspect it's off my diet these days. :-)
